Merion's Marvelous Eccles Cakes

A Recipe for Eccles Cake:

Ingredients:

tbsp sugar
1/2 tsp cinnamon
1 sheet puff pastry
1 cup of mixed, dried sultanas,raisins, currants
milk
sugar to glaze

Eccles cakes (pron. eecles) come from a town close to Manchester...Eccles (I'm actually guessing this). The Welsh Chef at my work makes really tasty ones.

Cut 13cm circles out of your puff pastry. You should get 5.

Take the cup of dried fruit etc and pour boiling water over them until they plump up. Drain off water. Add sugar and cinnamon.

Brush the edges of the pastry circles with milk. Place a spoonful of the fruit in each circle. Gather up the pastry and crimp the edges together, enclosing the fruit. Turn the parcel over, place on a lightly floured surface and roll a little flatter - don't overdo this or your fruit will come out to meet you.

Brush the top with milk and sprinkle with sugar.

Place in an oven preheated to 200C.

Eat warm...Yum.
